The ingredients are diverse yet scarce, but in the hands of the chefs, the untouched culinary heritage of the Eastern Himalayas is transformed into a modernist expression of Himalayan cuisine.
Talking about the venture, Chef Viraf Patel says, “We are celebrating the culinary culture of the Himalayas while retaining the region’s rich heritage. We undertake the techniques passed down through generations and aim to highlight the distinctive ingredients while offering a contemporary twist to suit modern tastes and preferences.”
Across menu highlights include Corn & Nettle Soupsprinkled with Himalayan wild chives, Buckwheat Frieswith salyan timur and chilli served with charred tomato chutney, Fry Bread a Tibetan-style flatbread topped with kalimpong cheese, Buff Choila, smoked buff infused with bold spicy seasoning and nutty red rice flakes and Lentil Pancakes, savoury black lentil pancakes with poached eggs served with tomato chutney.
From the Big Plates, Festive 9 Bean Stew, Mushroom Thukpa, Himalayan Trout, Buff Kheema Noodles and Ema Datsi are a must-try! Every dish on the menu reflects profound tastes with the influence of geography on gastronomy and tells stories of remote mountain communities.
For the infusion, spices and seasonings, most of the ingredients are procured from the region to preserve the authenticity of the taste. Chef Prakriti adds, “At Across, we’re reimagining the world’s most unexplored culinary traditions. It’s an exciting journey that blends ancient flavors with modern techniques, celebrating the diverse tastes from some of the most remote regions—and bringing them to your table for everyone to enjoy.”
