Hakuba, Cheval Blanc Paris Awarded 2 Stars By The Michelin Guide

Opened in March 2024, Hakuba is the fourth restaurant by Cheval Blanc Paris, born from the shared vision of Chefs Arnaud Donckele, Takuya Watanabe and Maxime Frédéric. Hakuba offers a gastronomic initiation conceived as a journey, where the traditions of the Land of the Rising Sun meet the treasures of the Atlantic and French coasts through the art of kaiseki-sushi cuisine.

Hakuba’s unique menu celebrates nature, the seasons and culinary gestures, carried by the close collaboration of the three Chefs:

“It is a great joy to receive this distinction from the MICHELIN guide, which rewards collective work. Thank you! Hakuba represents all the passion I have invested in discovering Japanese art, which marks a new chapter in my quest for creativity. This success is also one of my teams at Plénitude who have joined me in this adventure with kindness and trust. I also sincerely thank Olivier Lefebvre, CEO of LVMH Hotel Management, and Wilfried Morandini, General Manager of Cheval Blanc Paris, who support me in our projects,” comments Chef Arnaud Donckele.

“This recognition from the MICHELIN guide touches me because it rewards our approach to Japanese culture, which is so unique and powerful. My thanks to Chefs Arnaud Donckele and Maxime Frédéric for their quest for the absolute balance of flavours. Thank you to my teams, and thank you to France for giving me the opportunity to express my cuisine,” declares Chef Takuya Watanabe.

“I am moved and grateful for this award. I feel like I have discovered the Japanese archipelago between rice fields, cherry orchards, and seasons in search of the richness and subtlety of flavours that are at the heart of this cuisine. I thank Takuya Watanabe for generously sharing his knowledge of rice, which has been very inspiring in a culture that does not favour sweet food,” highlights Pastry Chef Maxime Frédéric.

Cheval Blanc Paris expresses its gratitude to the MICHELIN Guide for this 2 stars. They are in line with Plénitude, the three-starred gastronomic restaurant since 2022, and Le Tout-Paris, the contemporary brasserie awarded one star since 2024, both led by Chef Arnaud Donckele.
