one8 Commune Bangalore is thrilled to unveil the launch of Commune Collective with its first edition - At the Pass with Varun Pereira,”m an exciting, weekend-only chef pop-up experience on August 3 and 4. Commune Collective is one8 Commune Bangalore’s newly launched experiential pop-up series designed to bring unique dining experiences from across the world to the city. 

Drawing inspiration from his recent travels to Mexico, Chef Varun, in collaboration with one8 Commune’s Corporate Chef Agnibh Mudi, presents an authentic Mexican street food experience. Guests can indulge in a variety of fresh tacos, sizzling birria, delicious taquitos, and succulent camarones, all expertly paired with tequila cocktails by Don Julio. To top it all off, unique desserts provide a perfect sweet finale.

Chef Varun Pereira, known for his work with culinary giants such as Lupa, Sly Granny, Toast and Tonic and so on, brings his passion and expertise to this unique experience. He expressed his excitement about the event - “I am very excited about this collaboration with one8 Commune and to be the first to kick off their Commune Collective series. Chef Agnibh has been the perfect partner as his innovative ideas and his cooking style compliment mine very well. This played a huge role in putting together the menu. My journey through Mexico was a revelation. The authenticity and vibrancy of the cuisine there inspired me to recreate those flavours here in India. This menu is a tribute to the rich culinary heritage of Mexico, and we are thrilled to bring this experience to Bangalore.”

Chef Agnibh Mudi echoed Varun’s enthusiasm, saying, “Teaming up with Chef Varun has been nothing short of exciting. Our shared passion for authentic flavours, deeply rooted in cultural traditions, has resulted in a menu that is both exciting and new. The collaboration allows us to push the boundaries and take you through the map of Mexico from a unique lens of creativity and offer something truly special to our guests.”

“At the Pass” offers more than just a meal; it’s an interactive and immersive experience. Guests can watch the chefs in action at the Chef’s Bar, where they will be personally dishing out tacos. At this station, innovative pairings like green bean and egg tacos and classic Cochino Carnitas come to life. Guests can also enjoy the Live Taco Station, where they can personalise their tacos with a variety of fresh toppings, and the DIY Nacho Bar, which offers an array of sauces, cheeses, and extras to create their perfect nacho plate.

The pop-up also features a selection of Don Julio cocktails designed by their Head Mixologist, Sandesh Krishna, to perfectly complement the menu. The menu includes the refreshing Paloma, the spicy Cilantro Watermelon Picante, and the creamy Clarified Alphonso Rita. Taking the experience to another level, Don Julio is introducing one-of-a-kind frozen cocktails, adding a refreshing and fun twist to the evening. And just when you think it couldn’t get any better, the desserts bring a unique surprise. The Corn Tac-Oh! is a showstopper, pairing Ulo Ice Cream’s creamy, sweet corn ice cream with a crispy, hard-shell waffle taco, garnished with your choice of spicy chilli caramel popcorn or rich chocolate crumble. This dessert is not just a sweet ending but an adventurous and unique twist that will leave you amazed.
