1 onion, quartered

Method: Preheat your oven to 325°F (165°C). Rinse and pat dry the turkey. Season the cavity with salt and pepper. In a bowl, mix the softened butter with the chopped fresh herbs, salt, and pepper. Carefully separate the turkey skin from the meat without tearing it. Spread the herb butter mixture under the skin. Stuff the turkey with the quartered onion, halved lemon, garlic cloves, and fresh herb sprigs. Tie the turkey legs together with kitchen twine. Place the turkey on a rack in a roasting pan. Roast for about 3.5 to 4 hours, or until the internal temperature of the thigh reaches 165°F (75°C). Let it rest for 20-30 minutes before carving.

Creamy Mashed Potatoes
Ingredients:
4-5 large russet potatoes, peeled and cut into chunks
1/2 cup (1 stick) unsalted butter
1 cup milk or cream
Salt and pepper to taste

Method: Place the potato chunks in a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add the butter, milk or cream, salt, and pepper. Mash the potatoes until smooth and creamy. Adjust the seasoning to taste.

Grandma’s Pumpkin Pie
Ingredients:
1 pie crust (homemade or store-bought)
1 1/2 cups pumpkin puree
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 large eggs
1 1/2 cups evaporated milk

Method: Preheat your oven to 425°F (220°C). In a large bowl, mix pumpkin puree, sugar, spices, and salt. Beat in the eggs, then gradually stir in the evaporated milk.
